Veggie Burgers
These great-tasting veggie burgers are made using tofu which helps to keep a consistency that holds them together. You can vary the ingredients, just change the carrots for say, finely-chopped mushrooms or aubergine for a variety of options.
Veggie Burgers Ingredients:
- 500g soft tofu (buy this at your nearest chinese supermarket or health food shop)
- 1 large onion, finely chopped
- 200g grated carrot
- 500g breadcrumbs
- 1 teaspoon of Marmite
- 1 egg
- Couple of pinches of salt and a few good grinds of black pepper
- 1/2 a teaspoon of mixed herbs
Veggie Burgers Steps:
- Place the onion, carrot, tofu, marmite, egg, herbs, salt and pepper into a bowl and stir until well mixed
- Add the breadcrumbs and mix well
- If the mixture is not stiff, add more breadcrumbs
- Form the mixture into burger-shaped portions - I use an old burger-press - easy to use and cheap
- Place a couple of teaspoons of olive oil in a griddle or frying pan over a medium heat
- Fry burgers for 10 minutes, turning every couple of minutes
- Serve with a side salad or in a bun with salad ingredients
- If you wish, you can store the burgers in the freezer and they keep well for a month or so
